How to Make Spaghetti Squash in 8 Minutes!

I love spaghetti squash. To me, it’s as comforting as eating a big bowl of spaghetti and meatballs or spaghetti bolognese. The issue with spaghetti squash is how long it takes to cook! FORTY FIVE MINUTES IN THE OVEN?! I am a pretty impatient person, so that was a major turn off for me. Because of the aforementioned impatience, I recently bought an Instant Pot and have been loving cooking foods that normally would take hours in only a few minutes. Spaghetti squash is def my fave thing to cook in the instant pot. It’s just SO easy and you end up with a perfectly cooked meal!

What you need:

  • Instant pot or pressure cooker
  • Spaghetti Squash
  • Water
  • Whatever toppings you want mixed in with your squash

    Instant Pot Spaghetti Squash

First thing you are going to do is find the steam rack that comes with your pressure cooker and situate it at the bottom of the IP. This will help you pull the squash out at the end.

Next, cut your spaghetti squash in half. It can be horizontally in half or vertically- whichever fits better in your pot. I have also had to cut the squash into quarters to get it to fit, it’s all the same thing so don’t over think it.

Then you want to start scooping the seeds out. Have a trashcan or trash bowl handy so you can really scrape it all out.

Once all the seeds are out, pour about a cup of water into the IP and place the squash on the steam rack.

Close the instant pot, press the manual button, and set the time for 8 minutes.

Once the 8 minutes are done, do a quick release to let the steam out and then carefully take your  squash out of the IP and begin shredding!

Plate the squash and top with whatever you want!

This night we just topped with some basic pasta sauce, parmesan, and caper berries.

 

There is a TON of squash that comes out of one spaghetti squash so they are great for meal prepping or feeding a couple of people. You will love how yummy and easy it is!
