Easy Hummus!

I am a hummus freak. I LOVE hummus. Store bought hummus is fine, Farmer’s Market hummus is better, but homemade hummus is EVERYTHING! It’s also really easy and you probably have just about everything you need already.

Ingredients:

  • 1 can of chickpeas
  • 1/2 teaspoon baking soda
  • 2 lemons (or more to taste)
  • 1- 1 1/2 teaspoon minced garlic
  • 1/2 cup tahini (I love the one from Trader Joe’s)
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2-4 tablespoons ice water
  • Any garnish- I use paprika and parsley if I have it

Directions: 

  1. Boil chickpeas for about 20 minutes until they look larger and the skins are falling off. Drain the chickpeas and pour cool water over them to stop the cooking
  2. In a food processor, combine lemon juice, salt, and garlic. Let this mixture sit for a few minutes to mellow the garlic flavor.
  3. Add tahini to the garlic mixture and mix together until smooth and combined.
  4. As you are mixing the tahini in, add the ice water slowly to create an extremely smooth mixture
  5. Add cumin and chickpeas to the food processor
  6. While mixing the chickpeas in, slowly drizzle olive oil in to the mixture, adding more ice water as needed to thin the mixture and add smoothness
  7. Taste and add salt as needed

Serving suggestions:

  • Dip anything and everything into it. Pita, pita chips, veggies, your fingers, whatever
  • Make a greek bowl with falafel, chicken, hummus, veggies, feta cheese and anything else your heart desires
  • Make a pita sandwich by stuffing hummus, veggies, falafel, chicken and feta into a pita
